The Center for Population Health (CPH) and Pennsylvania Highlands Community College has joined forces to create a series of simple cooking videos called POP MEALS. In the series, you’ll learn easy recipes that can be made with minimal ingredients and in very little time with CPH’s Local Food Systems Coordinator/Chef Nan McNinney and Penn Highlands student Kat Walker.
In the second POP MEALS cooking video, you will learn how to make an easy Veggie Omelet.
Easy Veggie Omelet

Ingredients:
3 eggs
Oil
Spinach
Frozen broccoli
Shredded cheese
Salt and pepper (to taste)
Any additional vegetables you like
Instructions:
1. Crack the 3 eggs into a bowl
2. Whisk the eggs
3. Spray your pan with oil
4. Add spinach to the pan
5. Add broccoli to the pan
6. Sprinkle in salt and pepper
7. Once the spinach is wilted and the broccoli is cooked, add the eggs and mix
8. Add shredded cheese
9. Store leftovers in refrigerator
